Broccoli, Cauliflower and Leek Soup

If there’s one thing that my blog has taught me over the course of the past few weeks, it’s that almost every ingredient can be enjoyed by all, if only it’s prepared in an attractive manner. For instance, my recipes forroasted sweet potato and parsnip soupandroot vegetable mashhave already proved that parsnip can be enjoyable. Likewise, this soup recipe has largely transformed my once obnoxious attitude toward the cauliflower.

The main suspect in the case against the cauliflower is the somewhat ubiquitous cauliflower cheese. You see, this loathsome dish tends to be one of two things; insipid or watery. However, it could be considered somewhat brutish to judge what was once my least favourite brassica, by a largely awful dish. Instead, why not follow my lead and enjoy the poor vegetable in this exquisite soup?

Swiss Chard Salad

One of the most exciting things about being a regular food blogger is that it has the potential to open up a whole world of ingredients that you never before knew existed. Of course, the word ‘chard’ has always been a member of our vernacular, but it’s never been clear to me quite how many varieties of it there are. Happily, such variety ensures that gastronomic inspiration is unlikely ever to go wanting, especially since one can always fall back on one’s ability to invent, adapt and experiment. One has only to wander into one’s local butcher or green grocer to fully appreciate the diversity of even the most local of produce. For instance, this morning I discovered a green grocer I had never before visited and before I’d even had time to take stock of my delicious surroundings several new recipes had forcibly entered my grey matter. However, it should go down on record that they were extremely welcome and particularlyfrugalguests.

Golden Oat and Raisin Cookies

Whenever I see that another blogger has made cookies using oats I get a jealous impulse to make some of my own. Baking is, in my opinion, the true calling for an oat – porridge just doesn’t do it for me. The texture of oats seems to impart exactly what I look for in a cookie; a homeliness that is hard to find in the more flashy cookies. In myoriginal oat and raisin cookie recipeI remarked thatchocolate chip cookiesare all well and good, but if I’m being honest, oats are where it’s at! However, I need to be more careful since using such a grammatically troubled phrase may well give me a nosebleed.

Raspberry, Orange and Almond Traybake

One of the things that you may have noticed about my style of cooking is that it tends towards the rustic end of the food-spectrum. Though I often find cakes with heaps of pretty icing and delicate touches rather impressive, they can also appear a little intimidating, or bring out the misanthropic person buried not-so-deep within; what baking inadequacy is being hidden under this particular fold of sugar? I will concede, of course, that the latter is probably very often an unfair reaction but still, my personal taste tends towards cakes with an honest, homely appearance. This spiel isn’t intended to offend anyone, many of you are truly spectacularly talented when it comes to icing and decorating cakes; it simply isn’t my way of doing things. Take this cake, for instance, it is simple, comforting and extremely delicious – baking, perhaps, as it was intended.

Infused Macaroni Cheese

There are dishes in life for which everyone has a recipe – this is one such dish. However, as with most, it is eminently possible for one to put in a little more effort and have ones mouth reap the rewards. In my experience, macaroni cheese is best when it isn’t overpowered by the flavour of a catastrophic quantity of mature cheddar; that’s not to say that it shouldn’t contain cheddar, but it needs a little more complexity to become truly exceptional. By far the best way of accomplishing this feat is to infuse the milk used to make the cheese sauce – it adds a surprising depth of flavour which gives the dish a certain gastronomic eloquence.
