Rocket and Egg Salad

Recently I’ve had relatively little time to dedicate to blogging or cooking – I’ve been working and writing my CV. In fact all I’ve managed to prepare in the past couple of days has been an extremely simple yet fantastically tasty egg and rocket salad. I think simple food is sometimes the best – meals which really show off individual flavours well. The important thing to remember is that you want to showcase the taste of every individual ingredient, so you don’t want to use a flavour which is going to overpower the others. So when making this salad it’s probably best only to use a small squeeze of lemon juice because otherwise you’ll find that it’ll dominate the dish rather than improve it. From a cooking perspective make sure the poached egg is runny inside as it forms an integral part of the salad dressing.

This will be my last post for a few days as I’m going to visit my lovely girlfriend. However, although I won’t be able to blog I’ll be taking my trusty camera with me in order to snap any frugal dishes which may be created on my travels. To be honest this will probably happen every night because I’ve been told that her family are sick of cooking – they want their resident chef back!

Egg and Rocket Salad {recipe}

Serves 1

Ingredients:

  • 1 egg
  • A handful of rocket
  • A few cherry tomatoes
  • Squeeze of lemon juice
  • Olive oil

Method:

  1. In order to poach your egg heat some water in a pan until just boiling, crack the egg in and a cook for a few minutes. As I said above try not to overcook it so the yolk becomes hard. Place a handful of rocket in a bowl, drizzle some oil over the top and add a squeeze of lemon juice. Add some tomatoes chopped in half to the salad and place the cooked egg on top. Finish off by seasoning.

Cost:This whole salad will cost no more than70pto make, and even less if you keep your own chickens like we do! Never has70ptasted so good!

Looks simply delicious. I love runny eggs, but never tried it in a salad before–mostly soaked up with bread or Korean rice.
Rockets! This is the first time I’ve heard of greens being referred to as such, but it’s a much more fascinating way of naming your vegetables than their plain North American terms.

I’ve never heard of “rocket” but I figured it was some kind of green leafy vegetable. I love salads with hard boiled eggs. I’ve never had it with a poached egg. I’ll have to try that.

Ah, see in Canada we call them arugula. Now I know where you’re at in the grocery store.
My favourite way of eating arugula is in a salad with strawberries, walnuts and feta. Maybe a drizzle of creamy dressing too.

Ahha, I think I’ve heard it called that before actually – the name certainly rings a bell. Your way sounds really nice, really sweet and delicious yet with a real kick from the feta. Delicious.

Salads and eggs are a frequent meal in the summer at our house. Really like the idea of poaching the egg instead of using hard boiled.

Actually… to clarify… I don’t grow eggs, I raise chickens who unselfishly give up their eggs for me. I use rocket (arugula) also as I do spinach, throw it into stir fry, soup etc. Plant it every 2 weeks and just keep cutting it back, it doesn’t bolt in the heat so keeps providing all summer long.

I made the same mistake a week or so ago I understand. Sounds really good! I’ll have to try growing my own salad leaves, althougb weather conditions at the moment probably aren’t the best… Please do try it. Thanks!
