Stir Fry Pork

The problem with coming home for the holiday is that there’s always so much bread, and bread makes you fat quickly, or in my case… fatter. So I thought I’d throw together something healthy, using many of the left-overs in the house while I was at it. Indeed, left-over pork is ideal for this dish as it makes it even more juicy and means it doesn’t require much cooking at all. This dish is also perfect summer food and if you work out the right balance of flavours, as I’m trying to help you do, it will be very fresh and delicious, the only problem being that it could prove easily overpowered

If there is no left-over pork in your fridge never fear, you can also use chicken, bacon, or beef. It doesn’t really matter, although I would say pork is preferred. As I’m now on my own in the day this recipe will cater for only little ol’ me, but of course it is easily scaled up. It will also take a mere 10 minutes to make, but you will need a wok.

Stir-Fry Pork {recipe}

Serves 4

Ingredients:

  • 50g pork, leftovers and cut into strips
  • 1/3 small pepper, thinly sliced
  • half a small onion, red or otherwise, diced
  • handful of bean sprouts
  • clove of garlic mashed
  • slosh of oil
  • 2 tsp dark soy sauce
  • squeeze of lime
  • 1/2 tsp ground ginger, or a small knob of fresh which would be better
  • pepper, no salt

Method:

Heat some vegetable oil up in the wok until very hot, add the soy sauce and then quickly add the pork. To this add the ginger and stir fry for a minute or so.

To this add the vegetables garlic and pepper and stir fry for two minutes, do not allow it to stay still because it will burn.

Dish it up in a bowl while still hot and crunchy and squeeze some fresh lime juice over it, eat immediately.

Cost:

This dish can be done easily for one person for just shy of£1, pork is seriously cheap meat. The joint we had on Sunday was easily enough to feed 5-6 people adequately and cost a mere£4.
