For me, this time of year is always ruled by slow cooking. And my recipe for Moroccan Beef and Apricot Tagine is the perfect embodiment of that ideal. 嗯,是n’t this a turn up for the books? Asecond guest postin as many weeks – what’s happening to me? This was yet another offer that was extremely difficult to refuse. I adore Indian food and to be given a chance to write about it on a genuinely incredible Indian food blog had me a little overwhelmed! The timing of the offer was also rather perfect since I’m currently on a sort-of hiatus from food bloggery due to the fact I’m with my better half. Enjoy!
Seaside towns like Aberystwyth are known for their good quality chip shops, and what could be better than sitting on the lovely promenade, watching the sun set, eating a fillet of freshly battered cod? As such, when I eat oven chips and frozen fish fingers I always feel a little empty because although what’s in front of me may be cheap, it isn’t particularly tasty.
Though this stew may not look like something one ought to eat in summer weather, it isn’t quite as rich as your usual stew and has just the right amount of kick to make it a perfectly summery dish. It’s also fairly light, if you use a conservative amount of sausage, because it is almost entirely devoid of carbs. The lightness and abundance of vegetables make it very healthy too.
One never hears very much about elusive food, indeed it is in general particularly static. This dish, first attempted a number of weeks ago, has however managed to elude my blog twice because of camera issues. Indeed, any suggestion that my food has been hiding from me can be taken as entirely false. Nevertheless I have finally caught the little blighter and am now bringing it to you, and do you know what? It’s bloody delicious. Until recently, pulses have never really been my “thing”, they never appealed to me, I don’t know why. The best thing about them, though, is that they are actually very tasty but also they are filling and cheap, how can someone as frugal as I possibly have ever hated those little munchy wonders?
