Spiced Bean Casserole

Beans and, more generally, legumes are fast becoming my favourite source of protein. This is not because I find them more interesting or more flavoursome than meat, but because they are both frugal and rest considerably lighter on one’s stomach. As you will know, meat is a lot harder to digest and I prefer not to have to do it too frequently. Having said that and at the risk of rescinding my own financial and biological high ground, it is rather difficult to opt for legumes over a well-cooked cut of meat – that may be the problem. Perhaps I ought to round out this paragraph by reiterating a point which I frequently make; one needn’t indulge in meat every day of one’s existence.

As we all know, summer is about eating light, fresh food like myCaprese salad.但是,我真的很喜欢继续吞噬slow cooked wintry meals during the summer. Having said that, this dish isn’t as wintery or as rich as a steak and ale pie and I personally think it worked rather well considering the time of year – especially on a Sunday, in lieu of a roast. This is so delicious I’ve had it a couple of times in the past few weeks; it has such a good depth of flavour and is incredibly satisfying to eat when it has been cooked for at least 3 hours. Indeed, the most important thing to remember when preparing this casserole, or any meal that includes the cheaper cuts of meat, is to cook it for a long time. After 3 hours the fat should have melted away from the meat, enriching the dish, and the meat will have become incredibly tender. This casserole would also work very well with on-the-bone cuts such as oxtail – meat on the bone is incredibly sweet and when cooked the marrow in the bones will melt into the gravy, enriching it further.

Sausage and Butterbean Casserole

One never hears very much about elusive food, indeed it is in general particularly static. This dish, first attempted a number of weeks ago, has however managed to elude my blog twice because of camera issues. Indeed, any suggestion that my food has been hiding from me can be taken as entirely false. Nevertheless I have finally caught the little blighter and am now bringing it to you, and do you know what? It’s bloody delicious. Until recently, pulses have never really been my “thing”, they never appealed to me, I don’t know why. The best thing about them, though, is that they are actually very tasty but also they are filling and cheap, how can someone as frugal as I possibly have ever hated those little munchy wonders?
